Food habits have evolved with the weather since ancient times. Generally, high-rich foods are recommended in cold weather, and healthy foods with fewer spices are recommended in hot weather. Nutritionists as well as doctors agree with this. So, let’s know the simple rule of cooking meat roast khichuri at home.

Ingredients for Meat:
To make roast meat with khichuri, you will need 1 kg of chicken or beef, 1 tablespoon of ginger paste, 1 tablespoon of garlic paste, 1 teaspoon of onion paste, 1/2 teaspoon of nutmeg and jaitri powder, and 1/2 teaspoon of turmeric powder. 4 teaspoons, red chili powder 1 teaspoon, cinnamon powder 1/6 teaspoon, cardamom 3, bay leaves 4, green chilies 2, onion chopped 1 cup, sour curd 1/2 cup, mustard oil 1/2 cup, salt to taste.

Method:
To prepare the roasted meat, first mix all the ingredients except chopped onion, cardamom, bay leaves, and green chilies and marinate the meat well for 2 hours and keep it in a regular fridge.

Once marinated, place a saucepan on the stove. Put oil in it first and add chopped onion. Then add cardamom and bay leaves. When the onions turn light brown, add the marinated meat. Now fry the meat well in that oil.

Keep the stove on medium heat and grind all the spices to mix well in the meat. Once it’s cooked, simmer the meat on low flame and cover it with a lid. When the oil floats on the meat, remove it from the oven.

Ingredients required for making Khichuri:
Mustard oil 1/3 cup, Bay leaf 1, Cardamom 3, Cinnamon pieces 2, Onion chopped 1/2 cup, Ginger paste 1 tablespoon, Garlic paste 1 tablespoon, Turmeric powder 1 teaspoon, Red chili powder 1/2 teaspoon, Polao rice 6 cups, Lentils 1 cup, hot water 12 cups, raw chilies 6, garam masala powder 1/2 spoon, kewra water 1 spoon, salt to taste.

How to make:
Add 1/3 cup mustard oil to a pan. When the oil is hot, add some bay leaves, cardamom, and cinnamon first. Wait for the flavors to infuse. Now fry the onion until light brown. Now cook with all the spices one by one for about 5 minutes. Then add pre-washed rice and lightly fried washed dal. Mix the rice and dal well with the spices and cook for another 5 minutes. Now add hot water to boil the rice and dal.

Keep the stove on medium heat. When the water dries up slightly, mix the cooked meat, garam masala powder, and green chilies. Cover with a lid and simmer on low heat until the rice and dal are fully cooked. After a while shake the upper khichuri down and the lower khichuri up. At the last stage, after removing from the oven, sprinkle 1 spoon of kewra water. Well, this is how delicious roasted meat khichuri is made.
