Since the Mughal period, Shahi Biriyani has had a distinct aristocracy. So you can prefer Shahi Shrimp Biriyani for winter lunch or dinner.
However, in the mood of winter, the joy of eating this food can be greatly reduced due to the lack of neat cooking. To solve this problem, today’s recipe has an easy technique to cook neat Shahi Shrimp Biriyani.
Even those who are completely new to cooking can easily cook the food neatly in this method. Let’s know what is required to cook Shahi Shrimp Biriyani-
Required Materials:
Polao rice 250 grams
12 large size potatoes Bokhara
Raisins 2 tbsp
Chopped onions 2 cups
Oil 1 cup
Ghee 1 teaspoon
Ginger-garlic paste 2 teaspoons
Ginger paste 2 tsp
4 green chilies
2 bay leaves
Cinnamon 2
Cardamom 2
4 cloves
Keora water 3 tbsp
Chopped onions brown and fried or grilled 3 tbsp
Saffron-soaked water 3 tbsp
Salt in moderation
25 medium prawns fried in light oil.
How to make:
First, wash the rice and drain it for 1/2 hour before cooking. Now put a saucepan on the stove to cook Shahi Shrimp Biriyani.
When the saucepan becomes slightly hot, add oil and ghee. Then add all the ingredients except potato bokhara, raisins, and green chilies. After browning, when the flavor comes out in cooking, add the polao rice which has been washed and drained a day before.
When the Polao rice turns light brown, add hot water to it. Remember, if the rice is not fried and browned, the Polawa will not be neat and tasty. Try to add twice as much rice as water.
Reduce the amount of water further if using fresh rice polao available in the market. You can add chicken stock water instead of hot water to enhance the taste of Biriyani.
At this stage add raw chilies and a quantity of salt. Now cover the saucepan on medium heat and wait for 10 minutes. The water will not dry completely at this stage. So, mix well the water of Aloo Bokhara and Keora and pre-fried prawns with the rice and wait on low flame with a lid until the water dries up.
Once boiled, serve hot with saffron-soaked water, onion paste, and raisins. In winter afternoon or night, roast the famous Shahi Shrimp Biriyani.
